GRAIN FREE BREAKFAST BAGELS
Ingredients

1 ½ cups            Pasture-Raised Shredded Mozzarella Cheese
1 oz                    Pasture-Raised Cream Cheese, softened
¾ cup                 Nut Flour of your choice
1 large               Pasture-Raised Egg, room temperature
1 tsp                   Baking Powder
1 T                      Everything Bagel Seasoning (Optional)
 

Instructions
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a medium saucepan, add the mozzarella cheese and the soft cream cheese. Warm over medium heat and constantly stir with a fork until well combined.
Remove from the heat and add the nut flour, egg, and baking powder. Begin mixing these in with your fork. When the batter cools enough to use your hands, form the batter into a uniform texture and consistency.
Divide the dough into 6 balls all about the same size.
Using your hands, roll out each ball into a long thin log and form into a circle. 
Place onto the prepared baking sheet and repeat with all 6 balls.
Lightly brush the top of each bagel with some water and sprinkle on the desired seasoning. It could be the Everything Bagel Seasoning or just pink salt.
Gently press the seasoning into the bagel dough.
Bake in the oven for 12-14 minutes.
When they are at room temperature, slice with a serrated knife.
Store in an airtight container.
 

FRENCH OMELET

Ingredients

2 large                   Pasture-Raised Eggs

4 large                   Pasture-Raised Egg whites

¼ cup                     Pasture-Raised Full-Fat Cream or Full-Fat Coconut Cream

1/8 tsp                  Pink Himalayan Salt

1/8 tsp                  Ground Black Pepper

¼ cup                    Organic Fully Cooked Ham, cubed

½ tsp                     Onion Powder or 1 T Organic Onion, chopped

1 T                         Organic Green Pepper, chopped

¼ cup                    Pasture-Raised Shredded Cheese of choice

1 T                         Pasture-Raised Butter of Ghee

 

Instructions

Whisk together the first 5 ingredients.

Melt the 1 T butter or ghee in a skillet over medium heat. Pour in the egg mixture. As the egg mixture begins to set, push the cooked portions towards the center, letting the uncooked eggs flow underneath. When the eggs are thickened and no liquid remains, top one-half with the remaining ingredients. Fold the other side over the added ingredients. Serve hot.
