AVOCADO EGG SALAD ROLL UPS
Ingredients

1 ripe            Avocado, peeled and mashed
4                    Pasture-Raised Eggs, boiled and chopped
4 T                 Bulgarian Yogurt OR Full-Fat Greek Yogurt
1                    Organic Green Onion, chopped
1 T                 Organic Red Onion, chopped
2 T                 Organic Fresh Parsley, chopped
1/8 tsp          Ground Black Pepper
½ tsp             Pink Himalayan Salt
4                    Grain-Free Siete’ Tortillas

Instructions
Place all ingredients, except for the tortillas, in a large bowl and toss together gently. Spoon the mixture onto each tortilla and spread evenly. Roll up the tortillas tightly and stick a toothpick in them to keep them rolled up.
You can eat them like a burrito OR slice each burrito into ¾" slices. Place a toothpick into each slice so they will stay rolled up.
You can eat them immediately or refrigerate them. 

Note: They stay rolled up better when sliced and then refrigerated.

APPLE PECAN ROSEMARY CHICKEN SALAD BOATS
Salad Ingredients

1 cup                    Chicken, cooked and cut into bite-sized cubes
½                           Organic Red Apple, cut into bite-sized cubes
1/3 cup                Pecans OR Nuts of Your Choice, chopped
1/3 cup                Organic Dried Cranberries
                  Romaine Lettuce Leaves for “Boats”

Dressing Ingredients
½ cup                   Bulgarian Yogurt OR Full-Fat Greek Yogurt
2 T                        Vegenaise Soy-Free Mahonnaise
1 T                        Apple Cider Vinegar
2 tsp                    Rosemary, chopped finely
1 tsp                    Dijon Mustard
1 tsp                    Raw Honey
½ tsp                   Onion Powder
Pinch                   Pink Salt & Black Pepper 

Salad Instructions
Place the chicken, apples, pecans and cranberries in a large bowl and toss gently.
Set aside while you mix up the dressing.

Dressing Instructions
In a medium bowl, whisk together all the dressing ingredients.
Pour the dressing into the salad bowl and toss to evenly coat the ingredients.
Spoon the chicken salad into the romaine lettuce leaves and enjoy!

CITRUS CHICKEN SALAD BOWL

Salad Ingredients

1 handful            Organic Chopped Romaine Lettuce

1 cup                    Chicken Meat, cooked and sliced or cubed

1 stalk                  Organic Celery, chopped

1 small                 Organic Orange, sectioned

½ ripe                   Avocado, peeled and cut into bite-sized chunks

4                            Cherry Tomatoes, cut in half

¼ cup                    Slivered Almonds

1 tsp                     Sesame Seeds

 

Dressing Ingredients

1-2 T                    Organic Sesame Oil

1 T                        Braggs Coconut Aminos

1/8 tsp                 Red Pepper Flakes or Ground Black Pepper (optional)

 

Salad Instructions

Place all ingredients into a salad bowl and toss gently. Set aside.

 

Dressing Instructions

In a small bowl, whisk the dressing ingredients together and drizzle over the salad. Enjoy!
